Quick and Easy Appetizer: Pickle Wrap Roll-Ups
Looking for a quick and easy appetizer to bring to your next party? Pickle Roll-ups are a no fail appetizer that you can prep in 10 minutes and make days ahead of time.
My brother Dave is a champ at making these for our family gatherings.
All you need is sliced corned beef or pastrami, whole kosher pickles and cream cheese. Dry the pickles with a paper towel.
Dave’s big tip is to slightly freeze the cream cheese so you can slice it easily with a cheese cutter, rather than trying to spread the cheese which can be difficult because sometimes the meat will rip in the process.
Quick and Easy Appetizer: Pickle Wrap Roll-Ups
- 3/4 Pound Sliced Corn Beef or Pastrami (I like to pick mine up locally at <a href="http://surdyks.com/deli-surdyks/daily-deli-specials/" target="_blank" rel="noopener">Surdyk's Deli</a>)
- 1 Jar Kosher Dill Whole Pickles (Medium to Large Sized)
- 8 Ounce Block of Cream Cheese
Lay a piece of meat (flat) on your Charcuterie Board.
Slice a very thin section of cream cheese horizontally off the top of the cream cheese block with a cheese cutter – yielding a 2″ wide x 4″ long thin piece of cream cheese. (Tip: if you slightly freeze the cream cheese it is easier to slice thin).
Place the thin slice of cream cheese on the meat.
Dry a whole pickle with a paper towel.
Place pickle horizontally on the short end of the meat/cream cheese slice and gently roll the pickle from end until it’s all wrapped in a blanket of nummy cheese and meat.
Place finished pickle wraps whole in the fridge in a sealed container.
When ready to serve, slice pickle wraps in 1/4 inch slices.
Arrange on your Charcuterie Board and serve.
